In our laboratory, we test honey samples from across New Zealand to ensure only the best quality New Zealand Manuka honey makes it to production. We treat the honey with the same care and respect as our friends, the bees. We don't damage the honey by overheating it; we bring the honey's natural goodness and taste profile to the fore. We celebrate the beautiful caramel and malt notes for which Manuka honey is famous. At Airborne, we subscribe to the international Codex Alimentarius standards the World Health Organisation prescribes. This voluntary standard ensures that the honey is raw/ undamaged from heat and that none of the pollen is filtered out. Along with that, we use pollen count as our guide.
